How it works

Celsius and Fahrenheit are converted exactly (°F = °C × 9/5 + 32), then rounded to the nearest 25 °F, the way US oven dials and recipes are marked. Gas marks follow the standard UK equivalents. For a fan or convection oven, reduce the temperature by about 20 °C (25 °F) or shorten the cooking time.
