How it works

The scale factor is new servings ÷ original servings. Each line’s leading quantity — whole numbers, decimals, fractions (3/4), mixed numbers (1 1/2) or symbols (½) — is multiplied by that factor and rounded to the nearest common kitchen fraction.

When scaling a lot, keep an eye on salt, spices and leavening (which may need less than a straight multiplication), and adjust pan sizes and baking times.

How do I halve a recipe?

Set the new servings to half the original. For eggs, beat one egg and use about half of it (roughly 25 g).

Can I scale baking recipes?

Yes, but use a pan with the same depth so baking times stay similar, and weigh ingredients if you can for accuracy.

Does cooking time change when I double a recipe?

Often it does — larger roasts and deeper dishes take longer. Check doneness with a thermometer rather than the clock.
