The times follow USDA guidance for roasting a fully thawed turkey at 325 °F (163 °C). A turkey is done when a food thermometer reads 165 °F (74 °C) in the thickest part of the breast, the innermost part of the thigh and the wing — and, if stuffed, in the center of the stuffing too.

Thaw in the refrigerator at about one day per 4–5 lb, or in cold water at 30 minutes per pound (changing the water every 30 minutes). Let the bird rest 20–30 minutes before carving so the juices settle.
