How it works

Slow cookers simmer food at roughly 200 °F (93 °C) on Low and 300 °F (149 °C) on High; one hour on High is about two hours on Low. Commonly published conversion ranges:

  • Oven 15–30 min → High 1–2 h or Low 4–6 h
  • Oven 35–45 min → High 3–4 h or Low 6–8 h
  • Oven 50 min–3 h → High 4–6 h or Low 8–12 h

Because a slow cooker loses very little moisture, reduce the liquid in oven recipes by about a third. Going the other way, braise in a covered Dutch oven at 325–350 °F and add liquid as needed.
