How it works
US egg sizes are set by minimum weight per dozen. Without the shell, a large egg weighs about 50 g (about 3¼ tablespoons), a medium about 44 g, an extra-large about 56 g and a jumbo about 63 g. Up to two or three eggs, sizes are interchangeable; for larger quantities, or in custards and cakes, match the total weight.
