How it works
By weight, instant : active dry : fresh ≈ 1 : 1.25 : 3. Instant yeast has smaller granules and more live cells, so slightly less is needed; fresh yeast contains about 70% water, so it takes about three times as much. A US packet holds ¼ oz (7 g, about 2¼ tsp) of active dry or instant yeast. Active dry yeast is traditionally dissolved in warm water first; instant can be mixed straight into the flour.
